This one has a genuinely good backstory. Mantas Siautilas wasn’t a trained chef – he studied training systems – but one day he decided to bake pizza for his family and let the dough rest for 24 hours. That single experiment turned into a full obsession with Neapolitan pizza, a recipe he couldn’t find anywhere else so he built it himself.

The first Pizzarella food truck opened in spring 2024. Lines stretched to two hours pretty quickly, and regulars started calling in the morning just to reserve pizza for that evening. Growth was basically inevitable from there – the truck became a proper pizzeria. Ingredients still come straight from Italy, and the dough recipe is the result of years of tinkering.

Neighbourhood was started by Dovilė and Tomas Ryzgeliai, and the name says exactly what they’re going for – kaimynystė, or “neighbourliness.” Dovilė’s spent over a decade in Lithuanian gastronomy – restaurants like Protėviai and Fisheria, hosting the LRT show “O ką skanaus,” talks at food festivals about sourcing good ingredients. The concept grew out of the artists’ courtyard next door and that easy, everyone-knows-everyone feeling, and Dovilė and Tomas wanted to recreate it through food and atmosphere.

Pizza does the heavy lifting on the menu, from a classic Margherita to something like the Gorgonzola A Pera – pear, blue cheese, fresh thyme, walnuts – which honestly shouldn’t work as well as it does. The dough is Neapolitan flour, slow-fermented, 60% hydration, so it bakes soft rather than crackly. Instead of a standard tomato sauce they use Rosso Gargano, grown specifically in Apulia for the local soil and climate, and the cheese is Fior di Latte from Latteria Sorrentina – a dairy with four generations behind it. Worth it if you want pizza and a proper glass of wine afterward, since it doubles as a wine bar.
